Florianópolis gains, this Thursday (9), a new address for those seeking an authentic Italian gastronomic experience. The Italian chef Filippo Ferrantelli inaugurates the third unit of Carbone Pizza & Pasta, this time in Sapiens ParkOn Canasvieiras — a move that marks another step in the brand's expansion in the city.

With capacity for up to 200 people, the new space is designed to go beyond just a restaurant: the aim is to also be a meeting point for celebrations, events and experiences, maintaining the essence of Carbone — a house with a 100% Italian soul, run by the founding chef himself. “I am Italian, I am the chef and founder of the brand. Everything here stems from that,” Filippo emphasizes.

Unlike traditional Neapolitan pizza, Carbone focuses on Roman-style pizza, with a lighter and crispier crust, and a menu that includes classic and original recipes from Italian cuisine. Highlights include dishes such as Gnocchi with Parmesan fondue, Ravioli di Brie, and Strozapretti Amatriciana, as well as appetizers like bruschetta, carpaccio, and the traditional corniccione—the restaurant's signature dish.

To celebrate the opening, this Thursday evening (starting at 19 pm) will be dedicated to invited guests, including journalists and influencers from the city, at a themed dinner showcasing the restaurant's concept. The evening's menu includes tomato bruschetta, corniccione, and carpaccio padano as appetizers, followed by a selection of pastas and finished with tiramisu. To accompany the meal, classic Italian drinks such as Aperol Spritz and Garibaldi, as well as wines, complete the experience.

The event is held in partnership with the brands Global Wine, Campari, Aperol, and Águas Prata, reinforcing the concept of a complete immersion in the Italian atmosphere — from the menu to the toasts.

The new location opens to the public Monday through Friday for lunch and dinner, expanding Carbone's presence in the city and solidifying its mission: to deliver a truly authentic Italian experience, straight from the source, rather than just serving dishes.
