A University of Vale do Itajaí (Univali) offer the Junior Barista Extension Course, with the objective of training professionals to act as Baristas in an international coffee standard, according to SCAA standards, as well as guiding coffee shop owners to introduce specialty coffee in their operation. The course allows participants to develop knowledge and skills for a connoisseur and opinion maker of specialty coffee. Programming: Introduction - Origin of the Grain to the Barista; Coffee History; Coffee in the World, Coffee in Brazil; Types of Arabica X Robusta Coffee; Coffee varieties; Classification, Quality and Certifications; Roasting Types, According to Agtron Discs; Water quality; Knowing the Espresso Machine and its Components; Knowing the Mill and its Components; Organization of the Cafeteria and Cleaning of Equipment; Posture in front of the Client; Tasting of Different Types and Origins of Coffees and Referencing According to the Processing Method; Espresso Extraction Techniques; Mill Adjustment; Past Coffees / Pour Over; Extraction Techniques (Search for the Perfect Express); Cupping Basics; Cupping realization; Workshop – Milk; Introduction to Milk in the Coffee Shop with International Standards; Importance of Milk Texture in Drinks, Steaming Techniques; Introduction to Latte-art Techniques; Drinks based on Coffee with Milk (Cappuccinos, Lattes, Mochas, among others).
