Japanese food

Japanese food has conquered its space in Florianópolis. There is a new Japanese restaurant on every corner. Each one has its proposal. Some place more value on temakis, others offer sushi buffets, a la carte service or a sushi festival, where you can order whatever you want for a fixed price. Often, in restaurants, Chinese dishes are also served as a starter.

Despite the wide variety of dishes and ingredients of Japanese cuisine, what caught on in Florianópolis were sushi and sashimi. The vast majority of restaurants serve similar options, differing in aspects such as quality and price.

Curiosity: The pieces of ginger that accompany the dishes should be consumed between meals, as they serve to cleanse the palate. The soy sauce should only be applied on the fish side, because in addition to running the risk of breaking up the dumpling, the sauce makes the rice too salty. It is recommended to eat sushi in one bite. Chopsticks, chopsticks that take food to the mouth, should not be used to skewer food.

Harmonization: Japan has very peculiar drinks that go well with sushi. Amazake and Nigori wines, Genmaicha and Matcha green teas, Ramune soda, Shochu distillate, among others. These drinks are not easily found in Florianópolis. Sake, a drink produced by fermenting rice, is much more common and has even been added to caipirinha, creating the little sake, which can be a fun option. Some wines also give a good pairing. Light wines, with good acidity and a good aromatic palette generate an interesting result. They may or may not be sparkling. It is recommended to use little soy and wasabi when mixing with wines.
